Ingredients:

  • Penne Pasta

    1 lb
  • Radicchio

    1 head
  • Red Wine

    1/2 cup
  • Bacon (cubed)

    4 oz
  • Onions

    1
  • Extra Virgin Olive Oil

    2 tbsps
  • Black Pepper

    to taste
  • Salt

    to taste

Cooking Directions:

In a large pot, bring to boil enough water to cook the pasta. When boiling, add salt and the penne and cook until "al dente".

In the meantime, cube the bacon in small pieces.

Slice the onion in medium-thin rings and finely shred the radicchio. You can use the slicer of a food processor to work quickly.

Saute bacon and onions in the olive oil for about 1 minute, at medium fire, until brown.

Add the shredded radicchio and saute for 1-2 additional minutes.

Add to the sauce the red wine, adjust with salt and pepper and stir. Lower the heat and cover. Let cook for about 5-10 minutes until the radicchio is wilted. Adjust with some water if the red wine is not enough.

Remove the cover and, stirring frequently, let evaporate some of the liquid to obtain a thick, but not too dry, sauce.

Remove for the heat and dress the drained pasta.


Tips:

For a tastier result you may use cubed guanciale or Italian pancetta.
