Ingredients:

  • Rice (long grain)

    1 1/2 cups
  • Sweet Peas

    1 can
  • Cooked Ham (cubed)

    6 oz
  • Eggs

  • Carrots

  • Yellow Onions

    1/2
  • Black Olives (pitted and cubed)

    1/2 cup
  • Soy Sauce

    4 tbsps
  • Oil

    3 tbsps
  • Salt

    to taste
  • Black Pepper

    to taste

Cooking Directions:

Steam the rice.

Cube carrots, onions, black olives and cooked ham.

In a large wok heat some oil and pan fry carrots and onions with the ham at high heat.

Cook throughly until the onions are brown and then add the sweet peas and the soy sauce.

Let cook for 5 more minutes adjusting with salt ad pepper and remove from the heat.

In the mean time prepare scrambled eggs, simply heat a pan with some oil. Crack and quickly add all eggs one after the other. Scramble them directly in the pan with a wooden spoon so that they set just a little. Cook until the eggs consistency is firm.

In the large wok add the scrambled eggs and the rice to the sautee of vegetables and ham.

Saute for two or three minutes stirring continuously. Remove from heat and enjoy hot.
