  • Egg Yolks

  • All Purpose Flour

    2 oz
  • Sugar

    1/2 cup
  • Milk

    1/2 quart
  • Espresso Coffee

    6 tbsps
  • Vanilla Extract

    1 tsp

Cooking Directions:

Warm without boiling the milk with half of the sugar and the vanilla extract.

In the mean time beat the egg yolks with the remaining sugar and the warm espresso coffee. Always mixing, add the sifted flour.

Slowly pour the warm milk on the dough, mixing well. Transfer in a non stick pot and bring to boil at very low heat stirring continuously.

Boil for a minute or until the cream reaches the desired consistency. Let cool.


Coffee pastry cream custard is a basic recipe for a filling that can be used in many different desserts. Prepare it more fluid, adding some milk, if you want to use it for pies, cakes and pastry or more dense to obtain a flan to top with whipping cream.
