Pour some white wine on top and around the fish. The wine will maintain the fish moisten while contributing to the great flavor of this recipe.
Season the salmon fillets with salt, ground white pepper corns, celery seeds and some ground allspice to taste.
Place the salmon fillets in the oven pre-heated at 400F and bake for 25 minutes or until the center of the fillet is fully cooked. The salmon is done if it flakes easily, just use a fork to test it on the thickest part.
When the fillets are ready, remove from the oven and cut them in pieces. Carefully lay the salmon on a tray over a bed of lemon slices. Serve immediately with a side of vegetables, toasts or polenta.
To garnish, cut raw zucchini julienne style, and place them on top of the salmon fillets. Alternatively, use chives, cilantro or celery according to your preferences.
